Chicken Hash

Peel, dice, and boil potatoes. Cooking slightly less than for mashed potatoes

Cool the potatoes and mash them. They should be quite lumpy.

Put the mashed potatoes and all other ingredients, except for the chicken, in a mixing bowl. Mix well.

Taste. Adjust seasoning and add chicken.

Make patties approximately 1 1/2 inches thick. Fry in canola oil until brown and crispy.
This hash is great served with eggs for breakfast or smothered in gravy for lunch or dinner.
